SHRIMP DEFECTS

The “busted head” is the third phase of the deterioration of the shrimp’s head, in which the hepatopancreas bursts within its internal cavity.
This advanced state of decomposition occurs due to a combination of factors such as poor handling, inadequate temperature conditions during storage and processing, and a prolonged time from harvest to processing.
At this stage, the contents of the hepatopancreas disperse within the head cavity, causing an unappealing appearance and possible contamination of the rest of the shrimp’s body.
To prevent the condition of busted head, it is crucial to maintain a strict cold chain, minimize processing time, and handle the shrimp carefully at all stages of the supply chain.
