SHRIMP DEFECTS

The “broken membrane” refers to the rupture of the interior cavity of the shrimp’s head, specifically in the area between the intestines and the tail.
This defect can be caused by rough handling, inadequate storage conditions, or during the thawing and processing process.
The rupture of the internal membrane can result in the mixing of internal contents, which affects the visual quality of the shrimp and can facilitate bacterial contamination, compromising the safety of the product.
To prevent broken membranes, it is essential to handle shrimp carefully, ensure appropriate temperatures are maintained throughout the storage and processing process, and apply proper thawing techniques.
