HLSO stands for “Headless Shell-On” and refers to a specific type of vannamei shrimp product. In the HLSO shrimp preparation, the head of the shrimp is removed, while the shell is left intact. This means that the shrimp still has its shell, tail, and sometimes even the deveined vein, while the head is removed.
